Banana Bread

bread and in the past I've done it in my bread machine. I wanted to try something different and tried to get away from that huge bread machine slice. So I searched the web for a "good" banana bread recipes. Now mind you I had already checked with my mom for her recipe. She always made great banana bread. I never liked nuts in things and she would make a special loaf just for me. She would use an empty soup can and make mine without nuts. I loved it, it came out in those little round slices. Well her recipe is a combination of a few recipes (sound familiar?) and when I made it it just wasn't the same as hers. The one I found is a keeper I got it from Elise at Simple Recipe and I think she got it from somewhere else. The best recipes are passed down.

Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
Method
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

It was easy, and I didn't need a mixer. It tasted great! I am filing this one in my recipe box. Easy peasy! I love being able to use up those bananas that Maranda won't touch once it has a spot on it. We also have a bunch of bananas (no, I mean literally a "bunch") on the tree right now that needs to be harvested soon. Then we get tons at once. I think I need a good banana pancake recipe!

    Kristy - Thanks you, this is such a simple recipe to make and we actually finished the whole thing (unusual for my small family) They always seem to leave one or two pieces.
