This week I'm bringing back my easy cauliflower dip! After the holidays the last thing I want to do is spend too much effort in the kitchen for snack time. Here is a "healthy" and tasty dip.
Now I"m sure you all have heard of the cauliflower "mashed potatoes" where you puree steamed cauliflower here is the South Beach Diet Recipe:
4 cups cauliflower florets
1 ounce butter flavored cooking spray
1 fluid ounce fat-free half-and-half
Pinch freshly ground black pepper
Some recipes will add cream cheese, garlic, butter, cream, all the ingredients that makes mashed potatoes good!
We came up with a healthy snack that we use this same method but serve it cold with Tostitios Scoops. Start with steamed fresh cauliflower.
I add a couple tablespoons of Marzetti's Ranch Dressing (you could use the light).
Just pulse it a little, the texture was thick yet so I added another tablespoon.
Then whizzed it until the desired texture you want. I stirred in some garlic and onion powder, Beau Monde, Fine Herbs, (or you could use parsley) and Tarragon. You could leave it with just the ranch dressing, kids seem to like it that way, you could even leave the texture a little coarser. It's all in what you like.
This is so versatile you can go with whatever flavors you like. I have used turmeric to add some color, and it goes nicely with some curry blends. If you want to serve it warm you can go with some Parmesan or other cheese in it. So have fun!
