Personal Pizzas

I make these individual pizzas with frozen puff pastry. I let everyone make their own. It is so easy. You can also make apple or other fruit tartes the same way. Just roll the pastry, try not to stretch it. Cut it into 4 pieces. Pierce the center where the toppings go with a fork to keep that area from puffing up. Spoon some pesto or ricotta cheese, or pizza sauce, then add cheese, tomatoes, spinach, artichokes, or whatever toppings you like.
I use my stoneware bar pan, or pizza stone. Bake at 400 degrees for 20 minutes or until golden.


For the apple tarte, slice the apple fairly thin and place them overlapping on the pastry. Sprinkle with cinnamon and sugar. Bake 400 for 20 minutes or until the color and doneness you desire. When it comes out of the oven, spread apricot jam over the apples.
