    Bo, Originally eggplant was only white, hence the name - it looked like eggs hanging from the plant. It has firmer flesh, more seeds, tougher skin, and not as bitter.

    pigpigscorner, yes white eggplant, it's great, a little sweeter, but you have to peel the tough skin.

  20. I guess I'm not the only one strange to the white eggplant? I've had the typical aubergine...however...the ultimate for me personally would be a deep lilac coloured Sicilian eggplant. No center bitterness. I'm always looking forward to the month of August when our markets start showcasing them.
    Very appealing photos. Would love to have an apricot please ;o)
