Green Mango Salad

The sun has come out and stayed with us pretty much all day yesterday...we can again enjoy the out doors without getting wet...unless we want to jump in the pool. The temperature is still in the 80's and the humidity is down. Very pleasant here in south west Florida.
After the storm I gathered some more green mangoes that fell off the tree. The Kent mango which is the kind of tree I have stays green (the skin) even when it is ripe so it looks pretty much the same you just have to touch it to see how firm it is.I received a few good ideas from my friends on what to do with green mangoes...
After collecting the firm mangoes wash them very well, they drip a sap from the stem when they are picked even when they are ripe. If you are allergic to mangoes you will be itchy from the sap if it gets on you. After doing some research I gathered some info and made the green mango salad they way I would want to eat it...not too sweet, but first I had to taste it to see how I liked it. Erica was right they taste so good with just some lime juice squeezed over the top.
This is what I came up with after looking at loads of ideas 

INGREDIENTS:
  • 1large firm green mango washed peeled and julienned
  • steamed or cooked shrimp (optional)
  • 1 carrot peeled and julienned
  • 1 small shallot sliced or diced or not you can skip it or use green onion
  • 1 teaspoon ginger fresh grated
  • 1 sprig of mint chopped
  • 1 chili chopped ( or chili flakes to taste, I used shichimi togarashi)
  • FOR THE DRESSING:
  • 2-3 tablespoons fresh squeezed lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon palm sugar or brown sugar (you can use more)
  • 1 teaspoon chili sauce or chili flakes (optional)

Mix the mango, carrots, shallots, ginger, mint and chili in a large bowl.  In a small bowl whisk together the fish sauce, lime juice, sugar and chili sauce until sugar is dissolved. Pour over the salad and toss with the shrimp or just add them on top.
Garnish with black sesame seeds, (or you could use poppy seeds) and julienned shiso leaves or chili flakes...or really anything you want!!
It was pretty easy to make and I really liked the tart taste of the green mango...who knew?! :) I think this salad would be great with jicama, it would give it another texture and slightly sweet, or you could add beans sprouts. I like the mint here instead of cilantro and I didn't go very sweet, it's just my personal preference. You can go as spicy and sweet as you like. I wonder how avocado would work with this?! Well any way you make it...it's a wonderful summer salad.

  1. Oh no......now I am so jealous of the nice weather there and even mangoes from your own garden. Turning green like Shriek....haha. Love your mango salad. A friend of mine always makes Thai mango salad...very delicious.

    1. Diane the skin stays mostly green, it might have some redish pink or a little yellow in it, but mostly green. Of course the squirrels don't give them a chance to be tree ripe.

    They are expensive here in NY, so I buy them when they are on special~(overripe).
    This salad does look fresh and inviting.

  6. Mmmmmmm...my sisters introduced me to green mango salad and it was love at first bite! I've never made it myself, but I'll definitely be back for your recipe if I spot some green mangoes :) I hope your banana trees survive~

  8. One of the nice things when we lived in Florida was the mangos. We used to get bags full from our neighbors. The salad looks great.

  9. Looking at your chicken tenders and this mango salad, I just want to stuff them into a pita pocket or roll them up in soft flat bread and enjoy them like a roll-up sandwich!

  11. your mango post today activates my salivary glands..you know i'm imagining the tart mango and also the wonderful sauce, love that. Yeah, mint is nice in thai salad and so are lime juice and fish sauce, you did it so well, i love it!!

  12. Lyndsey, I wish I have mango tree in my garden. I LOVE LOVE LOVE mango green or riped. I can eat that whole plate of salad of yours. I can feel myself salivating while typing this comment. Oh dear, I need to go look for something to eat now. I am not kidding.

  14. Lyndsey, you finally got a great green mango recipe. Love the refreshing salad, and the addition of the shrimp. Would love to make this salad. We have plenty of green mangoes that have fallen off the tree from all the wind, and rain we had last week.

    I hear you, about that devastating wild fire in Colorado. My niece took in several friends to stay at her place that was effected from the fire, and she is just a college graduate getting started in life...new place, and a new job. I don't know how she can have 6 more young adults staying in a 1 br. apartment too long. It's devastating, but so real, and sad!

  19. Yikes, it sounds like you've been having some crazy weather. We're still in desperate need of rain up here. Talks of banning fireworks is going around due to the drought. Still waiting to see what's gonna happen. Might have to migrate up into MI somewhere where they'll do it over the lake.

    This salad looks so perfect for the heat...light and tart and still totally satisfying!

  23. Your salad looks yum! I eat green mango by slicing them up and add soy sauce and sugar, I find that very satisfying although my sensitive teeth suffered for a few days after that lol! Thinking about this green mango makes me salivate!

  28. I have never tried green mangoes (only green papaya but that's totally different thing!). Very refreshing salad for summer weather and I love fruits are in the salad. I can have double or triple serving and make it as my main dish especially I'm trying to shed some weight (ugh!).
