Easy Weeknight Dinner


After a busy day of dealing with kids that had too much fun over the weekend and don't want to be back in school, parents that send their kids to school sick, and even a 911 call at dismissal time. The last thing I want to do is cook a big meal. I was going to make the Martha Monday challenge, but I'll do it tomorrow. This one is too easy, but tasty. The photos don't do it justice.
Chicken Breast with Coconut, Curry Rice.
Just place the chicken breasts, 1 cup of rice, a 14oz can of coconut milk, 2t of your favorite curry powder and 1/4 to 1/2 cup of water in a casserole dish. Stir it up a little bit to blend in the curry. Cover and bake at 350° for 45 - 55 minutes or until the liquid is absorbed it depends if you use white or brown rice. I like it a little moist so I use the extra water and I mixed brown and white rice in this one so it baked longer than white rice would.

Quick and easy and it tasted better than the photos make it look.

  1. Aww, sending you some former teacher love from the Rocky Mountains. It's not always a fun job...but they need you.

    When I taught, at least I was single, so I could eat down a big pot of Red Beans and Rice all week and nobody would be the wiser. And I slept alone ;)

    Megan, I often do the coconut rice by itself, but on those days you just dump and bake.

    Sassy, I found a really nice Madras Curry blend it works so well with it, not overpowering. I usually serve it with steamed broccoli, my daughter loves it.

  6. Hi Michelle, Yes, I love jasmine rice. I think this would work well with any rice.
